Ginataang Kamansi/ Seeded Breadfruit in Coconut Milk

Kamansi or Seeded Breadfruit is closely related to Jackfruit. Both have sharp points on its skin. This is very rich in starch. I’ve never seen this eaten ripe like jackfruit. It is either roasted, baked, fried, or boiled. I personally have never eaten seeded breadfruit that way. We cook it with pork and coconut milk. It is served like vegetable and eaten with steamed rice as viand.You can also do this to unripe jackfruit.

Our neighbor has this Breadfruit Tree that is very abundant in fruits. There was a lot of harvest so she gave us three pieces.

Ginataang Kamansi/ Seeded Breadfruit in Coconut Milk

Ingredients

Scale
  • 2 cups thick coconut milk
  • 5 cups thin coconut milk{Or you can used canned coconut milk if fresh is not available}
  • 3 pieces of Seeded Breadfruit, peeled and cut into bite size pieces
  • 300g pork belly, cubed
  • 1 medium onion,chopped
  • 4 cloves garlic minced
  • 3 tbsp oil
  • 4 pieces bird’s eye chili, cut into pieces
  • 4 tbsp fish sauce
  • salt and pepper to taste

Instructions

  1. Extract thick coconut milk by combining 2 cups of warm water with grated coconut and squeezing the juice from it. Set Aside.
  2. Extract thin coconut milk by combining the same grated coconut with 5 cups of warm water.Set aside.
  3. Heat oil in a pot and sauté garlic and onions until onions become transluscent.
  4. Add pork and fry in together with the garlic and onion until it’s golden brown.
  5. Pour in the thin coconut milk and the breadfruit pieces. Stir
  6. Simmer until breadfruit is tender and the sauce a little dry.
  7. Add the thick coconut milk and fish sauce.
  8. Simmer for around five minutes or until the sauce has become oily and the coconut milk has curdled a bit.
  9. Add salt and pepper to taste and the chili.

  1. The green fruit in the picture that you are calling breadfruit is not breatfruit, that is chatine, don’t know if that’s the correct spelling but it’s pronounced, shatine( sha-tyne). A breafruit looks similar but unlike the chatine, it’s skin is smooth, whereas the chatine has spikes, ok just correcting you!

    1. This is called the seeded breadfruit. To peel, you have to slice through the thin layer of the skin using a knife. After peeling, you slice them in halves and remove the core.
