Fruit Salad with Ginger-Lime Syrup

This is the perfect dessert for those days where in you’re craving for something light. Or those days that you want dessert but your pants-are-going-to-burst-if-you-eat-some-more. Fruits. Fruits and more fruits. Eating fruits sometimes gets boring, though, so you have to spice it up a little. The ginger-lime syrup does the trick. It is very refreshing and not too sweet, it also enhances the flavor of the different kinds of fruits in the salad.

When I saw this recipe from Coconut & Lime, I immediately wanted to make it but it got stuck on that pile of “Recipes I Wanted To Try”. Until today, I am craving for a fruit salad but I don’t want to eat the usual Filipino Fruit salad with lots of cream and condensed milk. I wanted something that I could also snack on and wouldn’t feel heavy on the tongue.

Ingredients:
♥ for the salad:
1 ripe mango, cubed
½ small melon, cubed
1 cup pineapple [canned or fresh]
1½ cup grapes
2 kiwi, cubed

♥ for the ginger-lime syrup:

½ cup water
½ cup sugar
juice and zest of 1 lime
1 inch ginger, sliced

Directions:

  • ♥ ginger- lime syrup:Combine all the ingredients in a small pot and heat to a boil. Simmer for around 20 minutes until syrup gets a little bit thick. Strain pieces of ginger and lime zest.
  • Combine all the salad ingredient.
  • Pour Ginger-lime syrup and toss
  • Chill before serving.
