I haven’t done some cooking since thursday and I guess you know the reason why. Its just that since peanutbutter left, I felt like I’m cooking for nobody now. I wanted to sleep the whole day everyday, but this is something I don’t have the luxury of doing because I have a shop to run and a 2-year-old to take care of. Don’t get me wrong, I mean, I love cooking but I’m more inspired to cook because of him.

I woke up today and it felt so much better than the previous days. I’m missing him more but I think I’m getting used to the fact that he is working away. We are communicating constantly through SMS, chat, and video call so I am updated as to how he’s doing and what he’s doing. I think I can do this. They told me not to count the days but it’s 360 days before I see him again…

Today, I think I’m getting my mojo back and I made some cottage pie for lunch. Cottage Pie is an English minced meat pie made from beef and is very similar to Shepherd’s Pie which is also a minced meat pie but is made of lamb.

Ingredients

Scale
  • 300g ground beef
  • 1 small onion, chopped
  • 2 tbsp cooking oil
  • 1 small carrot, chopped
  • ¼ cup corn kernels
  • 2 tbsp butter
  • 1 tsp flour
  • ¼ cup beef stock
  • 1 tsp worcestershire sauce
  • salt and pepper

for the mashed potato

  • 23 large potatoes, boiled
  • 2 tbsp butter
  • 3 tbsp milk
  • salt and pepper

Instructions

  1. Sauté onion in heated oil until transluscent. Add ground beef.
  2. Season with salt an pepper. Cook beef until brown, transfer to another container and set aside.
  3. In the same pan, melt 1 tbsp of butter. Add flour, stirring constantly forming a roux.
  4. Continue stirring while adding beef stock to avoid lumps.
  5. Put the ground beef back on the gravy mixture and add worcestershire sauce. Stir for a few seconds then turn off heat.
  6. Cook corn and carrots in butter.Set aside.
  7. Mash potatoes with a masher together with butter, milk and salt and pepper.
  8. Layer ingredients [Beef, corn and carrots and mashed potatoes] in a baking dish or ramekins. Bake in 250º oven for 30-35 minutes until golden brown and bubbly.
