Pineapple Salsa

Who lives in a pineapple under the sea?….

Yeah, that’s what happens when you watch too much Spongebob Squarepants. You start humming the song that plays in the beginning of the show.

Let’s talk about pineapples…

Pineapple is one of my favorite fruit because it’s versatile. It can be eaten fresh, it’s great in juices, it’s great in salads, as a smoothie..and so on.

I can go on and on about pineapple and what I can do with it. It’s never-ending. That’s how much you can do with it.

Today, for lunch I made pineapple salsa…

Yup, pineapple can be made into salsa and it’s great with fish, pork or beef.

One BIG thing about salsa is that you have to have Cilantro…

and guess what? I forgot to buy Cilantro the last time we went to the grocery. {slaps forehead} AARRGH!

They don’t sell Cilantro at the local wet market…. because—oh, I don’t know,– I guess people just don’t use it that often in this part of the world.

I still went through with the salsa anyway

I just used those parsley in the fridge because I know I have to see something green in it…

….and you know what, it still turned out okay.

Not the perfect salsa which I would have preferred but still okay, still delicious…and still worth making.

Pineapple Salsa

Ingredients:

1 cup diced pineapple, canned or fresh will do
1 onion, chopped
1 tomato chopped
2 tbsp cilantro, chopped
2 tbsp lime juice/calamansi juice
salt or fish sauce

Directions:

  • Combine all the ingredients in a bowl. Mix well
  • Chill before serving

This is something that is very easy to do.. I hope you try it out.

  2. Even your make-do version sounds terrific! My mom made something like this for Christmas one year to go with the ham. I like how fresh yours is. Thanks for the great idea–I like trying something new.

  3. Peach, baka meron sa palengke, ask mo lang yung “wansuy.” Kapamilya din yata yung kinchay, baka pede substitute.

    1. Naku, Wansuy nga..wala kahit isang mag-gugulay ang may tinda….
      sa SM grocery lang kaya ako nakakabili ng wansuy….

  4. Wow – Cilantro or no…it looks delicious!  I’m a HUGE fan of cilantro and I completely agree with you…it does make a salsa dish.  So I’m thinking you may have to make this again!
