I’m excited!

I’m going on a trip to Cebu for three days and flight’s on friday morning. My sister surprised me with this trip, she told me this is her gift for my birthday on Sunday.  Isn’t she the nicest thing in the world?

It’s December and with the drizzles that we’ve been receiving, it’s getting quite cold. I’m assuming it will be a little cozy once we hit the sandy beaches in Cebu.

Not that I’m complaining because I love cold weathers… hot cocoas and cookies are definitely IN this season.

I know you’d love a cookie flavored with spices and a bit of tartness. I just wished I added more apples into it.

As always, here’s the recipe…..these turned out to be soft cookies, by the way.

I have a thing for soft cookies and chewy cookies..

Apple Cinnamon Oatmeal Cookies

Ingredients:

½ cup (1 stick) unsalted butter , softened
1 cup brown sugar, packed
1 large egg
1 teaspoon vanilla extract
1 cup all-purpose flour
1 ¼ cup oats, old fashioned or quick cooking
½ tsp baking powder
½ tsp baking soda
½ teaspoon salt
1 tsp ground cinnamon
½ tsp ground nutmeg
¾ cup coarsely chopped walnuts
1 medium apple, peeled, diced small (I used a red delicious apple)
1 teaspoon fresh calamondin juice

Directions:

  • Peel and dice the apple and toss in calamondin juice. Set aside.
  • Beat the sugar and butter in the bowl of a stand mixer fit with a paddle attachment forabout 3 to 4 minutes.
  • Add egg one, beating for 1 minute.. Add the vanilla extract and beat until blended.
  • Whisk together the oats, flour, baking powder, baking soda, spices and salt. Add to the butter and egg mixture slowly beating on low speed until just incorporated. Stir in the walnuts and apple chunks last.
  • Bake in the oven at 350° F {180°C} for 10 to 13 minutes or until they’ve reached your desired doneness.
  •  Allow to cool on the cookie sheet for 5 minutes before transferring to a wire rack to cool completely.

I’m seeing reds and greens….

Yup, it’s going to be Christmas soon.
