
Due to the fact that I’m on a diet….{or so I say}, I made salad for lunch today….
I figured I had to do it. It’s healthy. It’s delicious. It’s green {and red}….aaaand it has bacon.
Of course, it has bacon! Maple-flavored bacon. It’s one of the things that I love in this world.
Bacon is why I’m spending time with Shaun T every morning at 10am…
Bacon is why I let my pants hate me.
Bacon is why I wake up for breakfast.
Bacon is what I use to wrap everything.
I like wrapping delicious things in bacon –like banana, chicken and dates…It gives them that extra ooommpph.
Bacon, bacon, bacon.
Oh and my sister made Aglio Olio pasta. It complimented my salad.
Now, she’s asking me to go with her to this place that is 2 hours away to buy tickets for the Hot Air Balloon Fiesta next month.
Should I go with her? She’ll treat me for dinner and we’ll take the kids!
I better finish up this pile of work on my desk then…
I will definitely tell you if there’s cake….

Broccoli & Apple Salad
Ingredients:
1 ½ cup broccoli florets, blanched
1 red apple, cut into cubes
5 strips of maple bacon, fried and crumbled
½ cup of chopped walnuts
½ dried cranberries or raisins
4 tsp white vinegar
4 tbsp mayonnaise
1 ½ tsp sugar
Directions:
- Combine broccoli, apple, bacon {maple-flavored bacon are the best for this recipe}, walnuts and cranberries. Mix well.
- Combine mayonnaise, vinegar and sugar in a small bowl and whisk until.
- Pour mayo-vinegar mixture onto broccoli mixture.
- Mix well and make sure each ingredient is coated with the dressing.
- Serve chilled. Or Not.
Lots of dried cranberries were consumed in the making of this salad…like, a 300g pack. I ate them while I mix the veggies and pour out the mayo dressing. It was awesome. *sigh*
