The Healing Diet Lecture at The Maya Kitchen

I started this year with a few resolutions that leans towards healthful living. That is why I was so interested when I got invited to the
lecture on The Healing Diet by mother–and–son tandem of Blecenda Miranda Varona, DRPH, MPH, RND and Mark Miranda Varona, RND  at The Maya Kitchen.
Blecenda Varona is a Nutrition and Lifestyle consultant who is also an author. She has written and co–written Healing Wonders of Diet, Smart Cooking, Vegetarian Cooking Laboratory Manual and Succulent Vegetarian Workbook. She is an in–demand lecturer and resource speaker as well as a researcher in her field. Her son Mark is a licensed nutritionist who now works as a nutrition consultant in the family’s own NeedHealth Nutrition and Lifestyle Consultancy.
The lecture expounded on the “Prevention and Control of Diabetes, Heart Disease, Hypertension, Cancer, Stroke and Arthritis through Dietary Modifications.” The class focused on how the wise choice of food and its right preparation can bring anyone optimum health.
Honestly, I got a little scared in the middle of the lecture when cholesterol and blocked arteries were being discussed. I’m so guilty of eating fatty and high-calorie food.
After the talk was cooking and food preparation demonstration that includes Power Juice Fruit Blend Detox, Malunggay Pancake, Basic Tofu Quiche, Eggplant Szechuan Style, and Soyannaise as salad dressing or veggie dip.
Dr. Varona also showed us that it is possible to sauté onion and garlic using plain water.
It was still aromatic and the dish that was cooked tasted delicious…
I love the SOYANNAISE. It is a healthy alternative to mayonnaise and it tasted really good like it wasn’t made of tofu.
Here’s how to make it.

Ingredients:

1 small block tofu
2 segments garlic
¼ cup corn oil
1/8 cup lemon or calamansi extract
1 small onion
dash of salt

 Directions:

  • Blend all ingredients together until smooth and creamy. On a platter, arrange vegetables
