It’s strange how today felt like a friday… did you feel it?

Yeah, It’s crazy. My brain’s probably not functioning that well.

I figured I needed a vitamin boost so I made this super delicious Calamansi Curd and really,

It tastes like sunshine in a jar

I just couldn’t stop eating it by the spoonfuls…

Of course, I want to share it with you…..c’mon get your own spoon,

Let’s sit down and pretend that we’re sitting right in front of a big Calamansi Tree in our Lola’s {grandma}backyard…

A calamansi tree full of fruit, waiting for us to pluck them from the tree….

There’s a gentle breeze blowing to the left, just enough to make the air around us smell citrusy….

Hmmmm…this is nice…

…and sweet.

This is even better that that marmalade because you can eat this is as spread, dip or dessert. Your call.

Calamansi Curd

Ingredients

Scale
  • 4 egg yolks
  • 1 whole egg
  • ¾ cup sugar
  • ½ cup calamansi juice
  • 4 tbsp unsalted butter, cut into small cubes

Instructions

  1. Whisk together egg yolk and egg in a pot until combines.
  2. While whisking, pour in sugar and calamansi juice.
  3. Continue whisking until creamy and well incorporated.
  4. Place pot over medium heat.
  5. Continue whisking until the custard thickens and coats the back of a wooden spoon.
  6. Remove the pot from the heat, and stir in the butter, one cube at a time.
  7. Strain into a bowl or jar, cover surface with plastic wrap and chill in the refrigerator for at least one hour.

  5. I have never seen this fruit before, but I do love all things citrus.  The different strains of that type of fruit is endless, I do not think I will ever be able to taste all of them in my lifetime!  Your curd does look amazing, now I will be on the lookout for this fruit.  Delicious post!

  8. Wow! Thank you for this post! I’m a big fan of lemon curd and can’t get enough of it. Sometimes I just sit with a jar in front of me saying, ” just a teaspon…. hmmm one more teaspoon” oh I get what I’m getting at haha! Again thanks and I would live to use a lot of my leftover kalamansi.

  12. I had never heard of calamansi until now.  To me it looks like a lime on the outside, and a little less like a lime on the inside. I’m really curious as to its taste.  I’ll had to keep my eye out for them. Your curd looks absolutely delicious which makes me want to find these even more!

  14. Hello, I know this post is old, but I’m hoping the blog is still active! I’m hoping to recreate this recipe as part of a wedding gift– do you know if you can purchase calamansi in the US? I live Boston, MA and I don’t think I’ve ever seen them at the regular grocery store. Thanks for your help!
