peanutbutter loves pork chops and I can see why. It’s tasty, being attached to a bone and it’s totally universal. You can practically do anything with it. You can fry it, bake it, roast it, glaze it, put some sauce over it, put it over rice, over pasta and you can stuff it with anything.

I didn’t know stuffed pork chops are my thing until I made it. I stuffed it with black olives, garlic, mushroom, butter and cheese….

As much as possible, I like to keep the recipe simple, you know, like sticking with 5-7 ingredients…

In between stuffing and roasting, I also realized that these pork chops are kind of like how I want to live my life…

They’re big. They’re BOLD. They’re filled with all the good stuff you can imagine….love, happiness, contentment and courage.

I know. You might be thinking how weird I am, comparing my life to pork chops but it’s true. Life can be as simple as that.

I am letting myself be inspired with all the things that happen everyday….even little things like cooking, the morning drizzle, the instructor who’s sleeping while giving me driving lessons {what? yup, happened twice — made me twice as alert, hee}, those early morning FB chismis {gossip}….

and the fact that Life is really how you make it….

I hope these pork chops inspired you today… Thanks for dropping by…
