Who’s up for Chocolate Bacon Cupcakes? {with Candied Bacon, of course!}

I am so sleepy. Been sleepy since the moment I woke up until now that you’re reading this post. I’ve been getting less sleep than the usual these past few days.

But unlike my ever dearest husband who is so much grumpier in the morning, I am convinced that there’s a way to put a smile on my face each morning…….. even if you have to force it on with a wrench.

Yes, I am a morning person. Even if I don’t like washing the dishes in the morning and I never want my coffee and my breakfast together. {Fact: I like to drink coffee first before I eat breakfast}.

There’s something about waking up, all rested with the mind relaxed and refreshed.

With all that in mind, I think snuggling in the blanket late at night after I’m dog tired and waking up into a fine fresh morning whether it’s cold and rainy or warm and sunhine-y are both the best part of the day…

Other times, cupcakes are the best part of the day. Specially if they have chocolate and bacon in them.

These are the manliest cupcake I could think of to make for peanutbutter‘s birthday last monday.

Candied Bacon = Man Candy

Chocolate cupcake mixed and topped with…..what else but Candied Bacon?!

When I made this bacon I thought of making it solely for this cupcake but when I took a bite, I ‘d envisioned so much more.

This candied bacon and I still has a long way to go through in the near future. I’m seeing it in chocolate chip cookies, sprinkled over pancakes and waffles, eaten like popcorn and hung in the car as car air freshener…. I’m not kidding.

Oh, BTW I made Candied Bacon BLT the next morning with the leftover from the cupcake….so delicious. I’d definitely do it again.

Candied Bacon is very easy to make. Just coat each bacon generously with brown sugar, drizzle with maple syrup and bake in the oven until cooked.

Who’s up for Chocolate Bacon Cupcakes? {with Candied Bacon, of course!}

Ingredients

for the candied bacon

  • 200 g bacon
  • ¾ cup brown sugar
  • ¼ cup maple syrup

for the chocolate buttercream frosting

  • 1 cup unsalted butter (2 sticks or 1/2 pound), softened (but not melted!)
  • 3 ½ cups confectioners (powdered) sugar
  • ½ cup cocoa powder
  • ½ teaspoon table salt
  • 2 tsp vanilla extract or 1 teaspoon almond extract
  • 4 tbsp milk or heavy cream

for the chocolate cupcake

  • If you have a favorite chocolate cupcake recipe, go ahead and make it but you can also used a boxed chocolate cake mix

Instructions

  1. Candied Bacon: Coat each bacon generously with brown sugar. Drizzle with maple syrup and bake in the oven at 250ºC until it’s wavy and brown and sugar is dissolved and bubbling. It will harden once it’s cooled into room temperature.
  2. Chocolate Buttercream Frosting: Cream butter for a few minutes in a mixer with the paddle attachment on medium speed. Turn off the mixer. Sift 3 cups powdered sugar and cocoa into the mixing bowl.
  3. Turn your mixer on the lowest speed (so the dry ingredients do not blow everywhere) until the sugar and cocoa are absorbed by the butter.
  4. Increase mixer speed to medium and add vanilla extract, salt, and milk/cream and beat for 3 minutes. If your frosting needs a more stiff consistency, add a little more sugar. If your frosting needs to be thinned out, add additional milk 1 tablespoon at a time.
  5. Chocolate Cupcake: Make your chocolate cupcake like usual but add half of crumbled candied bacon pieces into the batter before baking.
  6. When cupcake has cooled into room temperature, pipe chocolate buttercream on top and sprinkle with candied bacon pieces.

    I remember a similar creation by Max, the cupcake-baker main character in Two Broke Girls – she also made a maple bacon cupcake they sampled to Martha Stewart in the finale episode!  I was intrigued! 🙂
