Sleep continues to elude me the whole afternoon.

I tossed and turned in bed last night, saw the clock turned 1am and then finally, I found myself awake at four.

That 50 Shades of Grey {Christian Grey and Anastasia Steele!} that is installed in my phone didn’t help at all…It’s either the one that’s keeping me awake or those cups of barako coffee I’ve been drinking.

So today, I summoned all the willpower that I have and limited myself to one cup of coffee. By mid-afternoon, my head is clamoring  for a cup of the good brew. I couldn’t think straight. I couldn’t even watch a movie.

I thought I’d give my senses a jolt by making one of my favorite concoction of all time. THIS.

Lemonade has been my favorite drink of all time. I could drink this everyday and on every occasion.

It’s refreshing, it’s tart, it’s sweet ~ it’s guaranteed to wake you up and perk you up.

Of course, I have to keep them as interesting as possible so I put a twist into them. I add another flavor.

Most of the time, I use natural flavors like Blueberry, Strawberry and Basil.

Today, I had the flavor I liked most. It’s Lemonade with a Pinoy twist.

I added the pandan to give this drink that sweet, almost nutty-citrusy overtone….

I hope the dream fairies are waiting for me tonight and pray that they immediately bring me to la-la-land as soon as my head hits the pillow…

And if they are taking requests, I’d like my dreams tonight to include:

  • peanutbutter
  • the bright green grass of a well-manicured golf course
  • stars
  • and bonfire

That should put me in a good mood come Valentines Day tomorrow….

To give your Pandan Lemonade it’s natural pandan flavor, you have to use pandan leaves and not the artificial pandan flavors available at the supermarkets. You could either make Pandan Syrup by boiling pandan leaves, water and sugar  for a few minutes untl it thickens and smelled greatly of pandan. OR you could make Pandan Water and use it as the base for your Lemonade.

I made a thin Pandan Syrup for this beverage. As much as possible, I want less sugar in my food and drink nowadays…

Pandan Lemonade

Ingredients

Scale
  • 1 cup lemon juice
  • 4 cups water
  • Pandan syrup to taste
  • lots of ice

Pandan Syrup

  • 8 pandan leaves
  • 2 cups water
  • 1 cup sugar

Instructions

  1. To make the Pandan Syrup, boil pandan leaves and water for a few minutes until water gets infused with pandan flavor. Add sugar and boil until sugar dissolves.
  2. Put everything in a large pitcher and stir to combine the flavors
  3. Serve with lots of ice!♥

  2. I’ve never been a huge fan of lemonade, but this one actually sounds incredibly good! I bet it is refreshing on a hot summer’s day! Definitely going to give it a try!
