I was planning to make this open-faced salted egg sandwich when my MIL gave me ten duck eggs which I brined and turned into salted eggs some four months ago.

But it seemd like my Salted Eggs turned out too awesome and everybody at home enjoyed eating it. Before I even knew it, there’s no more left for me to make into a sandwich. So when Trish of Sugarlace, chose this Ruby of a theme ingredient for February: Itlog na Pula/ Itlog na Maalat, I had a pretty good idea what to make.

Salted Duck Eggs or Itlog na Pula is our go-to filling when we don’t have anything else to spread in our pandesal in the morning. Usually, we just cut the egg in half and then scoop out the egg with a spoon.

The rich and salty egg yolk is perfect against soft, hot, chewy pandesal.

Salted Duck Egg is made by soaking duck eggs in brine for a few days or packing each egg in damp, salted charcoal. It is then tinted red just so you can tell it apart from the normal eggs.

Traditionally, it is paired with tomatoes and made into a salad which you can pair with rice as a viand in itself, or as a side dish to a variety of viands like tuyo, tocino, or tapa.

Thinking about this made my mouth water..Don’t judge pero parang ang sarap kumain ng naka-kamay habang nakataas ang isang paa sa upuan, do you agree? LOL!

Today, for lunch, I chose to make a version of this Salted Egg & Tomato Salad into a sandwich…

I guess I don’t want you to see me eating with my hands and with one of my feet up on my chair.

Open-Faced Salted Duck Egg Sandwich

Ingredients

Scale
  • 1 Salted Duck Egg, sliced
  • 1 Tomato, sliced
  • a handful of spinach leaves
  • 1 tbsp mozzarella cheese {or any quick melting cheese}
  • 1 tbsp mayonnaise
  • sesame bread

Instructions

  1. Toast sesame bread in the oven
  2. Spread a thin layer of mayonnaise
  3. Layer spinach leaves, tomato slices, cheese and egg slices.
  4. Return to the oven for a few minutes until cheese has melted
  5. Serve warm

  1. I’ve never eaten sandwich with salted egg as the main filling.. this should be interesting. I love salted eggs but usually will eat it with porridge. I will try this.  Looks tempting.

  9. Hmmmm.. that looks yummy! I didn’t used to love sandwiches, but now I do. I love to put avocado cream in my sandwich too though. I had some salted duck eggs before and man it was good. Again, This one looks really yummy. 🙂 Thanks for sharing. 🙂

  11. Madalas kong gawin yan na nakataas ang paa ? minsan talaga di mo nqpapansin dahil sa enjoy kumain. Di ko pa natry to na itlog maalat ang ilalagay, will definitely try this ?
