I used to look forward to weekends because when I go on a “diet” , I usually schedule out the weekends as my cheat weekends. Cheat weekends meant going overboard with chips, chocolates, chicharong bulaklak {ruffle fat}, and basically any other high fat, high calorie treat I vow to avoid during the weekdays. It felt oh-so-right because I was able to satisfy my cravings for the sweets and salties but I always find myself guilty during mondays. The effort I exerted the past week seemed useless now that I’ve binged. And it would all go downhill from there.

This weekend, I am saying goodbye to cheat weekends. No, I’m not promising to not eat chips, chocolates and ruffle fat but I am managing to control it. Yeah, portion control, baby. I don’t limit myself on what to eat and what not to eat anymore, but I regulate the frequency and how much I should eat. I think this meant my willpower is getting stronger.

Letting you know about it also helps, it means I couldn’t back down on this. It’s in writing and it has my signature on it.

Surprisingly, I found out that I’m not alone in this mid-year resolution. There are other mommies out there who are trying to eat healthy. And this is really do-able without sacrificing the flavor of the food that we eat. I also found out that some are even browsing this site for recipes. Whoa! I don’t think those recipes I posted in the past are healthy but I have to thank you. You just inspired me to create healthier versions of everyday recipes.

Chinese stir-fry dishes are delicious but it can be too oily at times. By doing it at home, you manage to avoid it being too oily and laden with msg. Believe me, it is quick and easy to do. This recipe incorporates two of my favorite crunchy vegetables:  snow peas and bell peppers.

I made this recipe because I’m thinking of what to do with the leftover Mr. Ube Special Noodle Sauce I used a few weeks ago. I am kind of cleaning my pantry and fridge at this time and getting rid of those stocks that are near their expiration dates. That Mr. Ube Sauce is just begging to be used, but no worries if you don’t have one home. There will be a recipe for the sauce below.

Stir-Fried Chicken in Chinese Garlic Sauce

Ingredients

Scale
  • 500g pound chicken breast, cut into strips
  • 1 tbsp sesame oil
  • 1 tsp cracked black pepper
  • 3 cloves garlic, minced
  • 150g snow peas, trimmed
  • 1 large red bell pepper, julienned
  • 1 large green bell pepper, julienned
  • 2 tbsp canola oil fro frying
  • 3 tbsp Mr. Ube Special Noodle Sauce OR

  • For The Sauce
  • 1 tbsp rice vinegar
  • 2 1/2 tbsp soy sauce
  • 2 tsp Chinese rice wine {optional}
  • 1 tbsp brown sugar
  • 1 tsp dried chili flakes, optional
  • 1 tbsp cornstarch

Instructions

  1. Marinate chicken breast strips in sesame oil and freshly cracked black pepper for 10 minutes.
  2. In a separate bowl, combine rice vinegar, soy sauce, dark soy sauce, Chinese rice wine (if using), brown sugar, dried chili flakes and cornstarch. Set aside. No need to do this if using the ready-made sauce.
  3. Heat canola oil in a pan and sear chicken on both sides until brown on the edges. Remove chicken from pan and set aside, leaving just a tablespoon of oil.
  4. In the same pan,sauté minced garlic until fragrant.
  5. Pour in sauce and give the sauce a stir until it thickens.
  6. Add chicken and stir-fry for a few seconds.
  7. Add snow peas and bell peppers and continue stirring until everything is coated with the sauce.
  8. If the sauce is too thick, add a tablespoon of water to thin it out.
  9. Serve over rice or as it is.

Notes

For this to be a South Beach Diet-Friendly recipe, please replace brown sugar with artificial sweetener.
