This is my first time to try making a risotto. I’ve always been intimidated in cooking it because I know that it is not the most carpal-tunnel-friendly recipe you can find. Cooking Risotto involves a lot of stirring wherein you add a small amount of broth at a time and allow the rice to absorb the liquid. This creates a creamy sauce that envelopes the rice and gives you all the flavor that you want.

I decided to make Cauliflower Risotto as Cauliflower is one of the vegetables I love. It has a mild sweet and nutty flavor that lend itself to whatever dish that you’re making. I had to choose a mild flavor for my risotto because I’m pairing it with a Garlic-Rosemary Roasted Chicken for lunch. Yet, I also want my risotto to be able to stand out on its own.

Yes, we had quite a heavy lunch yesterday…heehee.

Risottos are usually made using Arborio Rice, but nowadays I’ve seen risotto recipes made with steel cut oats, quinoa, and bulgur wheat. Since I am making this for the first time, I decided I should stick with the classic. But one thing I’m really happy about is that I’m making Risotto the easy way.

This gives me the chance to try out my Breville Multi Chef‘s Risotto function! The pre-programmed Risotto function of the Breville Multi Chef controls temperature to absorb flavor, lightly agitate while simmering, and turn itself off once ready. Simple, delicious, home made risotto, without stirring. What could be more easier than that?

Using Breville Multi Chef Risotto Function

Press the SAUTÉ/SEAR button and then the START/CANCEL button. Heat butter and olive oil then add chopped garlic and  onions. Cover with the lid and cook for around 3 minutes until translucent or until onions has softened.

Add the arborio rice and mix well….

Replace the lid and cook for around 2-3 minutes until rice becomes glossy..

Stir in the chicken stock, add the ground oregano, and mix well. Replace the lid and press the RISOTTO button and the START/CANCEL button.

This will cook for about 20-30 minutes and will automatically switch to warm. See? No stirring..

When the risotto has been cooking for around 15-18 minutes, I added the cauliflower, chopped parsley, grated parmesan cheese, and pepper just so the rice will absorb the flavor before it gets done.

I gave it a quick stir when the buttons has switched to warm and served it for lunch.

Like pasta, risotto is cooked al dente. It has to be slightly firm to the bite but not crunchy. I think I slightly overcooked it, though because I put it way too much chicken stock. Thank goodness it still resulted in a creamy, tasty Cauliflower Risotto for everyone.

For each cup of uncooked rice you’ll need about 4 cups of hot chicken stock.

Cauliflower Risotto using Breville Multi Chef

Ingredients

  • 4 cups chicken or vegetable stock
  • 1 cup water
  • 1 Tbs. olive oil
  • 1 large white onion, chopped
  • 1/2 head cauliflower, cut into 1/2-inch florets
  • 1 1/2 cups Arborio rice
  • 1/4 cup dry white wine
  • 1/4 cup chopped parsley
  • 1 cup grated Parmesan cheese
  • 1/2 tbsp ground oregano
  • Salt and Pepper to taste

Instructions

  1. Press the SAUTÉ/SEAR button and then the START/CANCEL button. Heat butter and olive oil then add chopped garlic and onions. Cover with the lid and cook for around 3 minutes until translucent or until onions has softened.
  2. Add the arborio rice and mix well.
  3. Replace the lid and cook for around 2-3 minutes until rice becomes glossy.
  4. Stir in the chicken stock, add the ground oregano, and mix well. Replace the lid and press the RISOTTO button and the START/CANCEL button.This will cook for about 20-30 minutes.
  5. When the risotto has been cooking for around 15-18 minutes, Add the cauliflower, chopped parsley, grated parmesan cheese, and salt and pepper just so the rice will absorb the flavor before it gets done.
  6. Give a quick stir and serve wqith more grated parmesan cheese
