The Holidays has kept me waking up at exactly 5:30am. EVERY. SINGLE. DAY. It was like my mind is forever on a Christmas rush. I guess that’s what I get for minding up what to prepare, what to cook, the things to buy, who to take to the airport, and what to wear.

As usual this morning, I was up and my mind is actively running at 5:30am. It felt like there were 500 microscopic Minions that are busy, having coffee, and getting ready to start my day.

I went to the market and bought some round fruits to put in our would-be house next year. I bought 8 as opposed to the 12 traditional ones that symbolizes the 12 months of the year. The number 8 symbolizes infinity and luck. I want to have infinite luck and a bountiful 2014, so there. I also bought some Pineapples which I put in every window and door to symbolize the eye for successful career and opportunities.

I know that these are just beliefs and traditions. I already have a few goals in mind for next year. I haven’t listed them down yet but I will be in the next few days to make it official. I’m willing to work hard and do everything to achieve those goals this 2014, so the year of the horse can just bring it.

For the mean time, let me squeeze in this recipe for Christmas Tree Brownies, one of the finger foods we had in our Snowman-themed Noche Buena.

It’s very easy to make. You just need your favorite brownie recipe or a brownie mix cooked just as you like. Cut them in triangles and decorate with green icing, red m&ms, and a star. Use a candy cane  for the Christmas Tree’s stem or footing. If you don’t have candy cane, you can  use a lollipop stick.

This is your everyday brownies, dressed up for Christmas.

Christmas Tree Brownies

Use a ready made mix if you are busy. Usually if I am, I use Pillsbury Chocolate Brownie Mix . But if you’re in the mood to make it from scratch, then here’s a delicious recipe to follow.

Ingredients

Scale
  • 1 cup flour
  • 100 grams butter
  • 1 ½ cup sugar
  • 4 eggs
  • 2 tbsp of Vanilla Extract
  • 6 heaping tbsp of Cocoa Powder
  • candy cane for christmas tree footing
  • red m&ms and candy star for christmas decors
  • royal icing

Instructions

  1. Using a mixer, cream butter and sugar. Add eggs and vanilla extract.
  2. Beat with the mixer for about a minute, then add the cocoa powder and the flour gradually until everything is incorporated in the mixture.
  3. Grease your pan before putting brownie mixture.
  4. Bake at 180° C for 25-30 minutes.
  5. To make sure it’s done, take a toothpick and slowly insert it through the middle. If it comes out clean, you’re good to go. If not, pop it back in for another couple of minutes till it does.
  6. Let brownies cool into room temperature.
  7. Using a triangle or christmas tree cookie cutter, cut the brownies.
  8. Use the long end of the candy cane for the Christmas tree footing, just cut of the bent end and insert it on your brownie.
  9. Tint some royal icing a teal green color and place it in a piping bag.
  10. Pipe in a zigzag line and them put the red m&ms randomly to imitate a Christmas tree. Put the candy star on top.
  11. Serve and enjoy.

    first time to bake brownies..I used Goya..too sweet!

    2nd premix: Maya.. taste is nice but there’s a point where it feels like you’re eating a pancake haha

    I still don’t have enough courage to bake from scratch! waah

  3. I love brownies! Although I haven’t had one in a while, (I’m trying to lose weight ;p) But this looks really good. If I have an oven, or when I have one, I’ll try this recipe. 😀
