Arroz Ala Cubana

There seem to be a lot of changes happening in my world lately.

For one, Twinkle is a constant adjustment. Her moods, sleep patterns, and routine are ever changing by the day. Second, I am still on that fitness journey which I am trying so hard to stick to — portion control, working out and all. I am highly encouraging Ykaie with healthy eating and so I decided to limit sugars and chocolate this week. Oh, and more fruits, of course!

Third, peanutbutter and I are thinking of something…… something that feels big and life changing and challenging. It’s kind of brewing on our minds for quite sometime now and we are talking about it constantly. There are times that I feel like we can do it, there are times I feel that we can’t. I’m part scared and nervous, part excited and ready. Who knows what will happen in the future, right? It just means that we have to take a leap of faith and see what happens. It means I would have to push myself and do something I’ve never done before.

Change is constant. Change is inevitable. We all have to adapt to change.

Looking back at this Arroz Ala Cubana I made in 2009 reminded me how far I’ve come in terms of cooking and photography. How my taste has changed along the years. How I’ve changed as a mommy and as a wife. But you know what? There’s always one thing that will remain constant — the lve I have for my family — specially the kids, Purple and Periwinkle.  I’ll always want them to feel loved, I’ll always want them to feel that no matter what I’ll have their backs. I want them to feel mommy will always be here for them.

Yeah. This post brought out my mommy feelings. Sorry. I didn’t mean to pour out my emotions.

What I really mean to say is that my Arroz Ala Cubana has improved a lot….. LOL! I wonder why I don’t cook this often?

Arroz Ala Cubana

Arroz Ala Cubana is the Filipino version of Cuban Rice. It is made with a mixture of ground pork and beef, cooked in tomatoe auce, carrots, peas, and raisins then served alongside with steaming hot rice, fried bananas, and a sunny side up egg.

Arroz Ala Cubana

Ingredients

Scale
  • 250g ground pork
  • 250g ground beef
  • 4 cloves garlic, minced
  • 1 onion,chopped
  • ¼ cup Canola Oil
  • 1 cup frozen peas and carrots
  • 1 red bell pepper, cut intosmall squares
  • ¼ cup raisins
  • 1/3 cup tomato sauce
  • 3 tbsp soy sauce
  • 2 pieces Bay leaf
  • salt and pepper
  • 8 pieces of cardava (saba) cut lengthwise and fried
  • 4 egg, fried sunny side up
  • steamed rice

Instructions

  1. Heat oil in a skillet. Sauté onions and garlic until onion becomes translucent.
  2. Add ground pork and ground beef. Stir-fry until pork and beef are golden brown.
  3. Lightly season with soy sauce and pour in tomato sauce.
  4. Add the bell pepper, peas, carrots and raisins and bay leaves when veggies start to soften.
  5. Stir-well and let it simmer for 1 minute to absorb sauce.
  6. Season with salt and pepper to taste
  7. Serve it with rice, fried egg and the fried bananas.

  8. This post made me think as well. That was a pretty dramatic intro though! Lol! But yes, I feel you there, when sometimes we think we can do it, but sometimes we’re like scaredy cats and would rather be on the safe side. But you know what, I think we should just do it, because in the future, we don’t want to regret and say “I wish I did this”. I think it’s rather good to hear “at least we tried”, than the other one.   17. You’re right, we can’t really avoid change, even within ourselves. The best thing we can do is to adapt and that’s it. That’s such a nice dish, and I like that you prepared it with fried bananas. There’s no better way to enjoy it than that.
