It has been a crazy week!  The last you’ve heard from me was last Saturday. I know I was still planning my weekly menu mentally over the weekend. Then I was planning on putting up our Christmas decorations and cleaning up the house…and doing some blogging on the side by monday.

But last Sunday night, there was an emergency and we had to rush my father to the hospital. I won’ t go into details anymore but it was emotionally draining. Everyone was worried, we took turns watching him at the hospital. Before I know it, it’s already the middle of the week.

It’s Ykaie’s 8th birthday today and we weren’t able to celebrate because her gramps is at the hospital. I’m thankful she understands. Hopefully,Tatay is already well on the weekend and we can celebrate by then.

What we did last night is she and her daddy baked a birthday cake and we did a birthday salubong. Please excuse the chaos that is our dining table.

Apple Vinaigrette

So I’m posting this Apple Vinaigrette that is perfect to dress up your fall salads. I’ve been eating greens before the weekend happened. Now, I’m stress eating a bit again…sob* I promise to be back on healthy eating next week.

Apple Vinaigrette

Ingredients

Scale
  • 1/2 cup apple juice
  • 2 tbsp cane vinegar
  • 1 tbsp honey
  • 3 tbsp olive oil
  • salt and pepper to taste

Instructions

  1. Combine everything in a large bowl and whisk until incorporated.
  2. Chill and it is now ready to dress your fall salad!

  12. I’ve never tried apple vinaigrette before. I imagine it will be a nice dressing indeed for salads. We usually buy a lot of apples so this is something we must try.
