Ham and Egg Breakfast Wrap

The weekend was a blur.

It was a flurry of a lot of things — Twinkle getting a vaccine and having fever, Ykaie and I having a baking sesh, going to church, and all the things that we do on a weekly basis.

You might want to ask me about how things are going with my weight loss goal. Well, just like what I said yesterday, I lost 2 lbs. Yay! It’s quite an achievement considering how minimal the changes I made.

This week, I think I got used to working out and I was able to increase my work-out time to 50 minutes. Whew! Kapagod!But I know it’s worth it cause I noticed I’m more energized this week.

Minor setbacks on healthy eating, though, because somebody dropped by The Purple Oven on the way home from church. We bought Sausage Puffs (my favorite!), Ensaymada, Cheese Roll, and 4 pcs of cookies!

Then Sunday, I made Baked Scallops for lunch then BarSiLog (fried barbecue, garlic rice, and scrambled egg) for Dinner. I didn’t eat rice but I had Pancit Malabon and God knows what else…… I think I’d have to keep a food journal. Or better yet, take photos of everything I eat so I can keep track.

This Ham and Egg Breakfast Wrap was actually made a week ago. This is what happened to our CDO Holiday Ham leftover from Christmas.

I love CDO Holiday Ham because it’s guaranteed a premium cut ham made from boneless meat not scraps of meat. It’s juicy, flavorful, and meaty! The gift pack they sent over last Christmas was even accompanied by Danes Cheese Ball and extra Pineapple Ham Glaze!

What makes this really good is that it’s wrapped in a warm, thin tortilla and you get mostly fillings. Mmmm… fluffy scrambled eggs, sweet, juicy ham strips, and fresh, crisp lettuce. Definitely a divine way to start your day.

Ykaie made me coffee and Cheese Sandwich this afternoon but I’m crossing my fingers I can Low-Carb it all the way this week.

Ham and Egg Breakfast Wrap

Ingredients

Scale
  • 4 pieces whole wheat tortilla wraps
  • shredded romaine lettuce
  • Holiday Ham slices, fried and cut into strips
  • Scrambled Eggs
  • Mayonnaise

Instructions

  1. Heat tortilla in a non-stick skillet.
  2. Assemble the wraps by spreading a thin layer of mayonnaise and layering scrambled eggs and holiday ham strips in the middle of each wrap. Then add some shredded lettuce.
  3. Roll up the tortilla and serve warm.

    This wrap looks amazing. I’ve been trying to perfect a homemade gluten free tortilla for over a year so that I can really enjoy wraps again. I had to go gluten free and corn free a year ago (great for my weight) and it’s meant giving up some favorites.

  10. You know Peach, I used to think that food aesthetics is not important. But I realized that when I eat at places where the staff/chef would present the food in such a pretty way, I get full more easily. Visual pa lang, busog na!

  17. Where do you get your wheat tortilla? This is a nice alternative to wheat bread. I easily get bored sa wheat bread although I know it’s a lot healthier than white bread.
