One week of healthy eating plus exercise has lost me 2 lbs! One week of no extra rice and healthier desserts (fruits and yogurts) has also made Ykaie lose 2 lbs. Yay!

This lifestyle change to a healthier family just might work since no deprivation and “diet” is happening.

I think we are off to a good great start this year, huh? And I think this calls for a celebration.

Oatmeal Honey Cookies

To celebrate, Ykaie and I had a baking sesh yesterday. We baked two batches of these delicious and healthy Oatmeal Honey Cookies using Maya All- Purpose Flour.

We are already an avid user of Maya All Purpose Flour when it comes to baking and cooking. What makes it exciting and magical this time is that the new Maya All Purpose Flour comes in a box that’s designed with Disney Princesses.

You have Snow White, Cinderella, and Sleeping Beauty in front and then there’s a family-friendly recipe at the back. Maya surely knows how make baking time magical for us. Ykaie felt she was baking with these Disney Princesses.

To start the baking, we had our ingredients all ready: 1 pack Maya All-Purpose Flour 400g, cinnamon powder, baking soda, salt,  butter, white sugar, brown sugar, honey, eggs, vanilla extract, and rolled oats.

After pre-heating the oven to 350ºF/177ºC and Lining a cookie sheet with baking paper, Ykaie began by sifting together the flour, cinnamon powder, baking soda, and salt. She was fascinated by how the sifter works and what it does to the dry ingredients.

Twinkle just recovered from a fever and she just won’t let mommy go, she had to join us in baking!

Next step is creaming the butter, white sugar, brown sugar, and honey until fluffy then beating in egg and vanilla.

It was easy for Ykaie because all we had to do is put the ingredients in the mixer and let them cream by themselves. After the mixture got all fluffy and well-combined, the flour mixture was added and mixed well.

Then the rolled oats were folded in. The mixture went inside the fridge to chill for at least 30 minutes. This gave me time to do some other household chores.

After 30 minutes, I called Ykaie so she can scoop the batter onto the prepared cookie sheet.

In went the fully-loaded baking sheet in the oven for 15 minutes.

The result are chewy, light, Oatmeal Honey Cookies that’s perfect for snack, school baon, and dessert!

Oatmeal Honey Cookies

Ingredients

  • 1 pack Maya All-Purpose Flour 400g
  • 2 tsp cinnamon powder
  • 2 tsp baking soda
  • 1/2 tsp salt
  • 2 cups butter, softened
  • 1 cup white sugar
  • 1 cup brown sugar, packed
  • 1/2 cup honey
  • 2 eggs
  • 2 tsp vanilla extract
  • 4 cups rolled oats

Instructions

  1. Pre-heat oven to 350ºF/177ºC. Line a cookie sheet with baking paper. Set aside
  2. Sift together the flour, cinnamon powder, baking soda, and salt. Set aside. (K)
  3. Cream the butter, white sugar, brown sugar, and honey until fluffy. Beat in egg and vanilla. (K)
  4. Add the flour mixture and mix until well incorporated. Fold in oats. Chill for at least 30 minutes. (K)
  5. Scoop or spoon batter onto the prepared cookie sheet. Make sure that there is at least a 2-inch space in between cookies because they will spread during baking. Bake until evenly golden brown, about 15-18 minutes. (K)
  6. Allow to cool on the cookie sheet for 5 minutes before transferring into a wie rack to cool completely.

Notes

(K) = Kid Friendly Task

TIPS:
1. Use an ice cream scooper to achieve even cookie sizes.

2. Rolled oats should not be mistaken as instant oatmeal. Instant oatmeal does not give the texture that rolled oats do, therefore structure of the cookie would be different.
