Chicken Detox Soup and My Health Journey Update

This Chicken Detox Soup is healthy, nutritious, and delicious. You can use it as a cleanse for when you’ve gone overboard in your diet or something to warm you up on cold days or when you’re not feeling well.

I’m guessing you knew what followed after the carbo-loading at Mama Lou’s Italian Kitchen in Nuvali last Sunday.

Yep. A little detoxing with a soup that’s both nutritious and delicious.

I used to be all guilty before when I’m on a diet and then I pig out all of a sudden because there’s a party, a family dinner, or a road trip. Not anymore. I’ve come to accept that life isn’t perfect and there are situations where in it’s more important to have a moment where you don’t have to think about anything but be present in it. Besides, what I have right now is not a “diet”, I am now embracing a lifestyle change which I think is really sustainable.

When these things happen to me before when I was on a diet, I go all the way downhill and binge for days after. Then I forget my diet.

These days, it’s all about balance.

This Chicken Detox Soup is really a great way to do a cleanse or to balance out carb-y and fatty things you ate the day before. It’s made of chicken and vegetables — nothing else. It’s all natural, all nutritious, and delicious.

Did you know it’s one month into my health journey? Ang bilis!

I know you must be wondering what happened. Well, here’s an update….

Start Date: January 9, 2016
Current Date: February 9, 2016

  • Starting Weight: 185lbs
  • Current Weight: 178 lbs
  • Total Weight Lost: 7 lbs
  • Goal Weight: 130 lbs

I know, I have to ditch this pambahay I took my photo with, I just have to show you how I was in the same outfit. (Ditching it next month, promise.)

I lost 7 lbs!! Yaaaay! I know it’s not much but  I lost that 7 lbs without getting hungry and without restricting myself with any food but rice.

I was also able to work out for 30 minutes three times a week.

I know the 7lbs that I lost is not that evident yet but my tummy shrank a teeny weeny bit in size (I am hoping you notice). I know it did because my tops and leggings got a bit loose. I also feel more energized.

Of course, I want to lose about 2 lbs. a week which is the healthiest one can lose. I just wasn’t able to maximize last month because, well, adjusting is haaarrddd!! Going on a no-rice diet is doubly hard! Ang sarap kaya ng rice.

Plus going back to working out is also hard…

My ideal work out time is at 4am when everyone is still asleep. The only time I fail to do so is (a) when Twinkle wakes up at that time; and (b) when I stay up late because of work.

So.. what I’m thinking about now is how to: (1) manage my time well, (2) eat more healthy, low carb meals, and (3) work out consistently for 4-5 times a week.

Oh, and yeah, I bought a Mi Band so I can track my steps… (Review coming up at www.mommypeach.com)

Chicken Detox Soup

Ingredients

Scale
  • 1/2 chicken breast
  • 8 cups of water
  • 1 carrots, chopped
  • 6 stalks celery, chopped
  • 1 head of broccoli, cut into florets
  • 1 large white onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • salt and pepper to taste
  • 1 chicken cube (optional)

Instructions

  1. Heat olive oil in a pot and saute garlic and white onions until translucent.
  2. Pour in water.
  3. Add chicken pieces, celery, and carrots.
  4. Season with pepper and bring to a boil.
  5. Turn heat to low and simmer until the chicken meat falls off of the bones, skimming off foam every so often.
  6. When chicken is soft and tender, remove from pot and pick the meat off of the bones.
  7. Shred the chicken.
  8. Return the chicken to the pot along with broccoli florets, season with salt to taste and chicken cube, if desired, and stir.
  9. Simmer for a few more minutes and serve hot.

  1. Oh man, I’m pretty sure I need this detox soup in my life ASAP! Due to my health issues I have major issues detoxing things from my body which explains where a good deal of my pain comes from, so any help I can get is appreciated! Plus I can’t do heavy duty detox things because I detox TOO fast so this seems like it’s very gentle. Thanks so much for the recipe! 🙂

  3. The chicken soup looks so delish! I can personally attest that rice can make us fat so fast! I didn’t eat rice back then but when I started to eat rice again, losing weight is such a difficult task! Wow! You losing 7 lbs is very inspiring to me because I am trying to lose weight too.   4. Thanks for sharing these. I have given up on dieting. I always end up heavier than when I started. I started cutting back on white flour and rice. I have reduced my calorie intake and have started getting active at least 3 times a week. I haven’t really gotten very serious, just little steps to get me started.

    Kudos to your weight loss goals!

  5. Congratulations on your achievement! It is good to read about people trying to get back into a healthy lifestyle. I lost about 20 pounds in 8 months. Yes. It was drastic and sudden, not because of choice but because of my battle with diabetes. It seems like everything I eat is just being thrown out of my body. Once my blood sugar stabilizes, I am trying this detox soup. Hopefully, it will get rid of the bad things that make my weight fluctuate like crazy. Thanks for sharing the recipe.

  6. You got a quite interesting recipe here. I am really intrigued as well of how this recipe helps you lose your weight, though workout helps a lot. I have been looking for ways in detoxing without getting on a hunger strike. lol But I will give this a try and observe what it can give to me.
