It’s the day after Christmas everyone. How was your Christmas Day?
I hope you got to celebrate it with your family and friends — the most important people in your life. Christmas this year was celebrated here at home. Yess! I hosted Christmas 2016 Lunch. I’m super duper excited to share with you our Christmas spread but before anything else, let me share with you this dish that surely won’t miss Christmas each year– and that’s macaroni salad.
This year, I have Christmas Ham and Queso De Bola Macaroni Salad. I’m sure you think it’s such a festive macaroni salad — and it is. It something that embodies my Christmas eves when I was younger. I miss having Noche Buena with my tatay who passed away in January of this year. His favorite food to eat during Christmas eve is Christmas Ham, Queso De Bola, slices of bread, and a mug of hot chocolate with ground peanuts. So I thought of making this year’s macaroni salad out of his favorite Christmas food. This way, it feels like he’s still with us on Christmas Day.

Ingredients
- 700 ml Lady’s Choice Real Mayonnaise
- 400g elbow macaroni pasta, cooked according to package directions
- ⅓ cup chopped carrots
- 1 cup diced Christmas Ham, cooked in its glaze
- 1/2 cup diced queso de bola
- 1 cup pineapple tidbits
- ½ cup raisins
- Sugar, salt and pepper
Instructions
- Combine all ingredients in one large bowl.
- Mix well.
- Season with salt, sugar, and pepper to taste.
- Serve Chilled

Pareho tayo Mommy di rin pwdengbmawala sa noche buena namin ang macaroni salad, favorite namin yun nila mama, pero yung paglalagay ng quezo de bola di pa namin natry gawin. Gagawin ko nga rin yan sa pasko.
