Dried Fig and Walnut Granola

  • 4 cups rolled oats
  • 1/2 cup quinoa
  • 1/2 cup chia seeds
  • 11/2 cup walnuts, chopped
  • 1 1/2 cup dried figs, chopped
  • 1/2 cup honey
  • 3/4 cup coconut oil

Instructions

  1. Preheat the oven to 350ºF (175ºC) and line a baking tray with greaseproof paper.
  2. Combine rolled oats, quinoa, chia seeds, chopped dried figs, and chopped walnuts in a large bowl.
  3. In another bowl, combine honey and coconut oil.
  4. Pour the honey-oil mixture into the oats mixture and stir well until combined. Make sure all the oatmeals and walnuts have syrups in them.
  5. Spread the mixture evenly on a baking tray and bake for 40 minutes. Stir every 10 minutes.
  6. After 40 minutes remove from the oven and let cool completely.
  7. Once the granola is cool, break it into chunks.
  8. This will keep in an airtight container for 7-10 days and longer if put on the fridge.
  9. You may eat it as is, with milk, or topped on yogurts.
