Tomato Meatball Soup
  • 1 cup celery, chopped
  • 1 cup chopped tomatoes {I used canned}
  • 1 onion, chopped
  • 1 tbsp olive oil/canola oil
  • 4 cups chicken stock
  • 1 tsp dried basil
  • salt and pepper to taste
for the meatballs:
  • 250g ground lean beef
  • 1 chopped onion
  • 1 egg
  • salt and pepper
  1. Combine all the ingredients for the meatballs and mix well.
  2. Shape mixture into small meatballs and set aside.
  3. In a small pot, sauté onion in heated oil until translucent.
  4. Add tomatoes and chicken stock.
  5. Simmer for a few minutes.
  6. Dropmeatballs, one by one, into the simmering soup and simmer for 20 minutes until the meatballs are done.
  7. Add celery, basil, salt and pepper.Simmer for 30 seconds.
  8. Serve hot.
