Pork Belly Sinigang (Sinigang na Liempo)

Ingredients

  • 2 tbsp cooking oil
  • 4 cloves garlic. chopped finely
  • 1 onion, chopped
  • 2 large tomato, quartered
  • 650g pork belly, cut into pieces
  • 8 cups water
  • 1 pork cube
  • 1 large gabi, cut into pieces
  • 1 radish, peeled and sliced
  • 15 pieces okra, cut into two‘s
  • kangkong leaves
  • 1 large sinigang mix
  • patis

Instructions

  1. Heat oil in a pot and sauté garlic, tomato, and onion until fragrant. Add the pork belly pieces and cook until brown.
  2. Add the pork cube. Bring to a boil and simmer on low heat for 20 minutes.
  3. Add the sinigang mix and stir to dissolve. Add the gabi and simmer for 10 more minutes.
  4. Add the radish boil for 3 minutes.
  5. Add the okra and cook for 3 minutes.
  6. Add the kangkong and Season with patis.
  7. Cover and turn off the heat. Let it stay covered for 5 minutes.
  8. Transfer to a serving bowl.
  9. Serve with warm rice and a dipping sauce of patis with siling labuyo.
