There are days when I feel like I’ve already cooked thrice before 3 p.m. — breakfast, baon, merienda. By the time dinner rolls around, I just want to sit, scroll, and pretend the kitchen doesn’t exist.

But then, the magic words appear:

“Mommy, what’s for dinner?”

And suddenly, I’m back on my feet, looking for something fast, comforting, and family-approved.

That’s how these 30-minute Filipino meals were born — easy recipes for busy weeknights when time is short but love (and appetite!) is plenty. 💛


🍗 1. One-Pot Chicken Adobo Stir-Fry

All the classic adobo flavor you love — minus the long simmering time.

This version uses smaller chicken cuts and quick stir-frying to save you at least 20 minutes! The sauce still has that perfect blend of salty, tangy, and garlicky goodness, but it’s lighter and done in one pan.

How to Make It:

  1. Sauté 5 cloves of garlic in oil.
  2. Add ½ kilo of bite-sized chicken, brown slightly.
  3. Pour in 3 tbsp soy sauce, 2 tbsp vinegar, 1 tsp sugar, and a dash of pepper.
  4. Simmer for 10–12 minutes until the sauce thickens.

Optional: Toss in green beans or bell peppers for color and crunch.
Serve with steaming rice — and maybe an extra spoonful of sauce. Because sabaw is life. 😋


🥣 2. Creamy Ginisang Monggo (Shortcut Style!)

There’s something about monggo that feels like a warm hug.
It’s healthy, filling, and perfect for stretching the budget — but who says it has to take forever?

This shortcut version uses pre-cooked mung beans (you can boil a big batch on Sunday!) and turns creamy and comforting in minutes.

How to Make It:

  1. Sauté garlic, onions, and tomatoes.
  2. Add 2 cups cooked monggo and 1 cup coconut milk.
  3. Season with fish sauce and pepper.
  4. Toss in malunggay leaves and simmer for 5 minutes.

Top with crispy tuyo or fried tofu. Pair with hot rice. Smile. You just made dinner in under 20 minutes.


🍝 3. Garlicky Tuyo Pasta

A lifesaver on nights when the fridge is empty but you still want something special.

This dish came from one of those “bahala na” evenings — and now it’s a family favorite! The flavor of tuyo, garlic, and olive oil hits all the right notes: savory, smoky, and very sulit.

How to Make It:

  1. Cook spaghetti or fettuccine.
  2. In a pan, heat olive oil and sauté lots (as in lots) of garlic until fragrant.
  3. Add flaked tuyo and toss in the pasta.
  4. Finish with chili flakes and a squeeze of calamansi.

Mom Hack: It looks fancy, tastes gourmet, but costs less than ₱100!


🍋 4. Quick Sinigang Rice Bowl

Because when life feels sour, we might as well enjoy it — literally. 😂

This shortcut sinigang skips the long simmer and turns the dish into a comforting rice bowl. It’s tangy, warm, and perfect for cold or stressful nights.

How to Make It:

  1. Sauté garlic, onion, and leftover meat (pork or bangus works great).
  2. Add ½ cup of water and a bit of sinigang mix.
  3. Spoon it over steamed rice and top with boiled kangkong or sitaw.

It’s all the flavor of sinigang — but with only one pan to wash.
