Arroz a La Cubana

Ingredients

  • 2 cloves of garlic, minced
  • 1 small onion,chopped
  • 100g ground pork
  • 100g ground beef
  • 1 piece of small carrot,cut in small cubes
  • 1 piece small potato, cut into small cubes
  • 1 small bell pepper, cut into thin strips
  • 2 tbsp raisins
  • 1/4 cup tomato sauce
  • 2 tbsp soy sauce
  • 1 Bay leaf
  • 2 pinches of basil (I used dried Basil)
  • 1/2 tbsp parsley (I used dried also)
  • 1/4 cup Canola Oil (this is what’s available)
  • salt and pepper
  • 2 pc of plantain,sliced diagonally into three and fried
  • 2 pcs. egg, fried sunny side up

Instructions

  1. Heat a skillet.Add 1/4 cup of Canola oil.Fry the carrots and the potatoes until the edges turn light-brown then set it aside.
  2. Pour off some of the oil from the skillet and sauté onion and garlic.Add ground pork and ground beef. Stir-fry until pork and beef are golden brown.
  3. Lightly season with salt and pepper and soy sauce.
  4. Add the bell pepper and raisins.Add bay leaf when veggies start to soften.
  5. Add the tomato sauce.Stir-well and let it simmer.
  6. Add the carrots and potatoes,let it simmer a little to absorb sauce.
  7. Add the basil and parsley.Stir to blend well.
  8. Seve it with rice, fried egg and the fried bananas. Enjoy!
