This is a refreshing salad that goes great with a Southeast Asian themed dinner party at home.
1 green mango, julienned
1 yellow mango, julienned
½ cup red onions, sliced thinly
¼ cup mint leaves, chopped
½ cup peanuts, roughly pounded
2 ½ tbs lime juice
2 tbs fish sauce
2 cloves minced garlic
4 sliced bird’s eye chili (cili padi
1 tbs pounded dried shrimp
2 ½ tbs light brown sugar
- Mix dressing together in a wooden bowl.
- Toss mangoes and onions in dressing.
- Sprinkle mint leaves and peanuts on top.
Toast the nuts first for added aroma.
You can easily make the dressing a day in advance. Toss in mangoes, onions + mint leaves just before serving to preserve the vibrancy of colors and taste.
