Pumpkin Pie Spiced Halloween Pancake

Ingredients

  • 100g squash/pumpkin, diced
  • Pancake mix yes, I use a ready-made pancake mix because I don’t have time to make it from scratch and I used Pillsbury
  • 1 tbsp Homemade Pumpkin Pie Spice
  • 4 drops Orange gel food coloring
  • ♥ for the syrup, I used prepared chocolate syrup colored with Black gel food coloring

Instructions

  1. Place diced pumpkin/squash in a baking dish. Sprinkle with a few drops of oil and bake at 190°C for 10 minutes or until it is golden and soft.
  2. Mash roasted pumpkin/squash with a fork.
  3. Mix Pillsbury pancake Mix according to package directions.
  4. Add mashed pumpkin, homemade pumpkin pie spice and orange gel food coloring.
  5. Cook pancake as you normally would, heat a non-stick pan and grease slightly with butter.
  6. Scoop about ¼ cup batter onto the hot griddle.
  7. Cook until bubbles appear on the surface and the edges look dry.
  8. Turn over and cook until golden brown.
  9. Draw creepy Halloween characters such as Jack O’ Lanterns, Spider Web and spiders with the black chocolate syrup.
