Pumpkin Pie Oatmeal Raisin Cookies

  • 2 cups all-purpose flour
  • 1 1/2 cups old-fashioned oats
  • 1/2 baking soda
  • 1 tsp ground cinnamon
  • 1/4 tsp ground cloves
  • 1/4 tsp ground ginger
  • 1/4 tsp ground nutmeg
  • 1/8 tsp allspice
  • 1 cup butter, softened
  • 1/2 cup white sugar
  • 1 cup brown sugar
  • 1 cup pumpkin puree
  • 1 egg, beaten
  • 2 tsp vanilla extract
  • 1 1/2 cup raisins

Instructions

  1. Combine flour, old-fashioned oats, baking soda and spices in a bowl and set aside.
  2. Cream together butter and sugars until light and fluffy.
  3. Add pumpkin puree, egg, and vanilla and mix until well combined.
  4. While mixer is running, slowly add in flour mixture until combined.
  5. Stir in raisins.
  6. Preheat oven to 350°F and line baking sheets with parchment paper.
  7. Scoop dough with ice cream scooper or spoon and drop onto lined baking sheets.
  8. Press dough down slightly with the back of a spoon because it’s very thick, it doesn’t spread when you bake it.
  9. Bake for 15-17 minutes or until just lightly browned.
  10. Cool for 3-4 minutes on baking sheets before removing to wire racks to cool completely.
