Low Carb Sugar Free Strawberry Muffins

Ingredients

Dry

  • 1 cup almond flour
  • 2 tbsp coconut flour
  • 1/4 cup granulated sweetener
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Wet

  • 2 large eggs
  • 4 tbsp unsalted butter, melted
  • 1 tsp vanilla extract

Strawberry Swirl

  • 1/2 cup Strawberries, chopped finely
  • 1 tsp granulated sweetener

Instructions

  1. Make the Strawberry Swirl: Place the strawberries and granulated sweetener in a small pot and cook on medium heat, stirring often. Cook until the strawberries are caramelized and fragrant.
  2. Preheat oven to 350°F
  3. Mix dry ingredients
  4. Mix wet ingredients
  5. Combine dry and wet ingredients.
  6. Fold in strawberry swirl
  7. Place in muffin cups and bake for 20 minutes
  8. Let cool and enjoy
