Chicken Afritada

  • 3 tbsp cooking oil
  • 1 large potato
  • 3 cloves garlic, minced
  • 1 onion, chopped
  • 800g chicken, cut into pieces
  • 150g pack tomato paste
  • 800ml water
  • 1 chicken cube
  • 1 carrot, cut into bite size pieces
  • 1 red bell pepper, cut into bite size pieces
  • 1 green bell pepper, cut into bite size pieces
  • patis to taste


  1. Heat oil in a pot and fry the potatoes until cooked. Remove from pot and set aside.
  2. Remove excess oil and leave about 2 tbsp. Sauté onions and garlic until onions become translucent.
  3. Add chicken and cook with the onions and garlic until brown.
  4. Add water and tomato paste. Simmer until chicken becomes tender.
  5. Add potatoes and carrots. Simmer for around 2 minutes. By this time the sauce becomes thick because of the starch in the potatoes.
  6. Season with fish sauce to taste.
  7. Add bell peppers and simmer for a minute or until bell pepper is cooked but not too soft.
  8. Serve with steamed rice.
