Chicken Tocino/ Sweetened Cured Chicken

Tocino or tosino is a cured meat product native to the Philippines. It is usually made out of pork and is similar to ham and bacon although beef is also used. It is often reddish in color and has a sweetish taste. Its name is derived from the Spanish word tocino, which is used to describe bacon or cured meat.[Source-Wikipedia]

Pork Tocinois one of our [sis and I] favorites. Since we are limiting our pork and fat intake nowadays, I decided to make Chicken Tocino instead. This is so good with garlic rice but I didn’t eat any. I ate this with veggies instead. You might be wondering why I didn’t show up for a couple of days.Well, I’ve been struggling with my diet,heehee… with my MIL’s birthday celeb here and my niece, Cyvrine’s 1st Birthday Celeb there.

So there, now that I’ve been able to blurt it out I can peacefully go on. I just have to settle with no rice,less fat,less sugar and more fruits and veggies for now. Good thing, though, I was able to force my lazy self to do a few exercises. I hope I could keep doing this everyday.

Ingredients:
400g chicken breast fillet
4 packets of Splenda
1 tsp salt
½ cup diet 7 Up or Sprite
a pinch of saltpeter
Red Food Color [optional]
Canola Oil for frying

Directions:

  • Cut chicken breast into nuggets.
  • Combine everything in a large bowl.
  • Mix well, let stand in the refrigerator for at least overnight.
  • Fry in canola oil until cooked.
  • Serve with garlic rice and fried egg.
