Pork Adobo sa Gata {Pork Adobo with Coconut Milk}

  • 1Kg pork belly, cut into pieces
  • 1½ cups thick coconut milk
  • 4 cups thin coconut milk {Or you can use canned coconut milk if fresh is not available}
  • ¼ cup vinegar
  • 4 tbsp soy sauce
  • 2 tbsp brown sugar
  • 3 tbsp cooking oil
  • 8 cloves garlic, chopped
  • 1 tsp black peppercorns
  • 2 pcs bay leaf
  • 3 tbsp shrimp paste
  • finger chilies {optional}

Instructions

  1. Combine vinegar, soy sauce and brown sugar in a bowl and mix well.
  2. Add pork belly and marinate for 1 hour.
  3. Heat oil in a pan and sauté garlic until aromatic…
  4. Add peppercorns, bay leaf and shrimp paste.
  5. Add pork belly and brown it a little then stir in the thin coconut milk.
  6. Add chili and simmer until tender.
  7. Stir in the thick coconut milk and simmer until sauce is really thick.
  8. With the pork and the coconut milk, this will yield a large amount of oil, you might wanna skim it from the top.
  9. Serve with steamed rice
