Pulled Pork Sandwich with Apple Coleslaw

  1. Place pork tenderloin in a baking pan.
  2. Drizzle with olive oil and rub with salt, pepper and spanish paprika.
  3. Cover pan with foil and roast in the oven at 160º for 3 hours.
  4. While waiting for it to roast make your apple coleslaw and TPK’s barbecue sauce. {Just click the name in the ingredients for the recipe}
  5. Pull meat apart with fork, then combine with barbecue sauce.
  6. To serve, put pulled-pork inside a toasted burger bun and top with apple coleslaw.
  7. Serve with gherkin pickles and ice cold beer *wink*
