Chicken Afritada

Ingredients

  • 3 tbsp cooking oil, i used canola oil
  • 1 large potato, cut into 1-inch pieces
  • 1 large carrot, cut into 1-inch pieces
  • 1 medium white onion, chopped
  • 3 cloves garlic, minced
  • 700g chicken pieces, I used leg quarters and wings for this recipe
  • 1 bay leaf (optional)
  • 200g pack tomato sauce
  • 1 cup water
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 1 tbsp fish sauce
  • pepper to taste

Instructions

  1. Heat oil in a pot and fry the potatoes and carrots until cooked. Remove from pot and set aside.
  2. Remove excess oil and leave about 2 tbsp. Sauté onions and garlic until onions become translucent.
  3. Add chicken and cook with the onions for a few seconds.
  4. Add water and tomato sauce. Simmer until chicken becomes tender.
  5. Add potatoes and carrots. Simmer for around 2 minutes.By this time the sauce becomes thick because of the starch in the potatoes.
  6. Season with fish sauce and pepper to taste.
  7. Add bell peppers and simmer for a minute or until bell pepper is cooked but not too soft.
  8. Serve with steamed rice.
