Pork Afritada

Ingredients

  • 3 tbsp cooking oil
  • 2 potatoes, cut into pieces
  • 1 carrot, cut into pieces
  • 1 onion, chopped
  • 3 cloves garlic, chopped finely
  • 1 tomato, chopped
  • 600g pork kasim
  • 1/2 cup tomato paste
  • 2 1/2 cups water
  • 1 pork cube
  • 1 red bell pepper, cubed
  • 1 green bell pepper, cubed
  • 1 tbsp patis

Instructions

  1. Heat the oil in a pot. Fry the potatoes and carrot until cooked. Remove and set aside.
  2. In the same pot, sauté the onion, garlic, and tomatoes for 2 minutes.
  3. Add the pork pieces and cook until brown.
  4. Add the tomato paste, water, and pork cube. Mix well.
  5. Bring to a boil and simmer for 30-40 minutes, until the pork is tender.
  6. Add the potatoes and carrots back.
  7. Season with patis and let simmer for about 2 minutes.
  8. Add the bell pepper and simmer for 30 seconds.
  9. Turn off heat.
  10. Serve with steamed rice.
