Chicken Adobo with Egg

Ingredients

  • 1 kg chicken pieces
  • 1 tbsp seasoning granules, optional
  • 3 tbsp oil
  • 8 cloves garlic, minced
  • 1/3 cup soy sauce
  • 1 cup water
  • 2 bay leaf
  • 1/2 tsp peppercorns
  • 300g chicken liver, washed and cut into pieces
  • 1/2 cup vinegar
  • 1 tbsp brown sugar
  • 1 tsp dried oregano
  • patis and pepper, to taste

Instructions

  1. Season chicken pieces with seasoning granules, if using.
  2. Heat oil in a wok and fry chicken pieces for 2 minutes on each side.
  3. In the same pan, sauté the garlic until a bit brown.
  4. Add the chicken pieces, soy sauce, water, peppercorns, and bay leaf. Bring to a boil and simmer for 20 minutes.
  5. Add the vinegar and bring to a simmer.
  6. Add the brown sugar and oregano. Stir. Simmer for 10 more minutes
  7. Season with patis, if needed and pepper.
  8. Serve with steamed rice.
