This Filipino Chicken Sandwich is a regular in our menu rotation here at home. Ykaie loves Chicken Sandwich at kahit araw-araw nya i-baon or i-breakfast ‘to ay okay lang sa kanya. She sometimes eats this with lettuce too, like a “Keto Sandwich” or a salad if you may…

I am also a fan of it and make sure to make it once or twice a month. I make this Chicken Sandwich Spread with fresh celery and carrots which I chop into teeny weeny pieces. It adds texture and provides a crunch every time you bite or chew into your sandwich.

I know some people who adds crushed pineapple to this and I guess it adds some freshness to the spread. I also know some who adds truffle oil and walnuts. I tried adding truffle to this once and talagang level up ang flavor! I also tried adding dried cranberries to my sandwich and it added a tartness which cuts into the creaminess. So kung medyo nagsasawa ka sa taste nito, I suggest you try adding dried cranberries too.

Filipino Chicken Sandwich

Ingredients

  • 1 large chicken breast, boiled and shredded
  • 470g pack mayonnaise
  • 1 carrot, chopped
  • 2 stalk celery, chopped
  • 1/2 large white onion, chopped
  • 1 tbsp sugar
  • 1 tsp salt
  • pepper
  • sliced bread
  • lettuce

Instructions

  1. Make the Chicken Sandwich Spread: In a large bowl, combine the first 8 ingredients.
  2. Mix well. Adjust the seasonings as needed.
  3. Chill for about 1 hour.
  4. Spread on toasted sliced bread, add lettuce, top with another toasted sliced bread.
  5. Enjoy!
