I don’t know about you, but I seriously believe that almost any kind of vegetable magically transforms into something even more delicious when it’s cooked with beef. Especially if we’re talking about sirloin — that cut with just the right amount of fat to give your dish a rich, savory flavor. It’s the kind of ulam that makes you go back for seconds (okay fine, thirds), especially when it’s paired with a steaming hot plate of rice. Ugh, sarap!

So today, I was craving something hearty and satisfying but still packed with veggies. I opened the cupboard and found some canned young corn, mushrooms, and green beans from the fridge waiting to be used — and boom! That was my sign. These three veggies, combined with tender beef, make the perfect trio for a quick but flavorful meal.

The beef sirloin was sliced thinly, just the way I like it, so it cooks fast and stays tender. I gave it a quick sauté in garlic and onion, then added a bit of oyster sauce for that umami goodness. It was simmered until soft and tender. After that, in went the young corn, mushrooms, and beans. I let everything simmer together until the veggies were cooked through but still had a nice bite to them.

The result? A saucy, savory, veggie-loaded ulam that’s just so satisfying. The young corn gives it a bit of sweetness, the mushrooms add earthiness, and the beans give it that extra crunch. Plus, the beef ties everything together with its juicy, beefy flavor — especially those little fatty bits that melt in your mouth. Ay, heaven!

Beef With Mushroom and Beans

Ingredients

Scale
  • 700g beef sirloin, cut into strips
  • 3 tbsp oil
  • 5 cloves garlic, minced
  • 1 onion, chopped
  • 1/4 cup oyster sauce
  • 2 cups water
  • 1 beef cube
  • 1 can young corn
  • 1 can whole mushroom, halved
  • 250g baguio beans, cut into 1-inch pieces
  • ground black pepper
  • patis
  • cornstarch slurry

Instructions

  1. Heat oil in a pan. Sauté garlic and onion until onion becomes translucent.
  2. Add beef and cook until brown.
  3. Add oyster sauce and water. Mix well and simmer for 30 minutes until tender.
  4. Add more water if the sauce becomes too thick. Add beef cubes. Stir until dissolved.
  5. Add the vegetables and let it simmer until cooked but still have a bite.
  6. Season with patis and ground black pepper.
  7. Add cornstarch slurry to thicken the sauce.
  8. Serve with steamed rice.
