But today, I thought I’d switch things up a bit. Instead of the usual plating, I turned our favorite tocino into something even quicker and more convenient — Tocino Fried Rice! Yes, you heard that right. Imagine your delicious tocino chopped into bite-sized pieces and tossed into warm, garlicky fried rice along with a medley of colorful veggies. It’s a whole meal in itself, and perfect for busy mornings or lazy brunches.

Ingredients
- 400 grams tocino, cut in small pieces
- 1+2 tbsp cooking oil
- 2 eggs, beaten
- 5 cloves garlic, minced
- 1 onion, chopped
- frozen vegetables: corn, carrots, green peas
- 2–3 tbsp liquid seasoning
- 7 cups of rice
Instructions
- Heat 1 tbsp oil in a pan, add the egg and cook. set aside.
- Heat 2 tbsp oil and fry the tocino until cooked. Set it aside on the pan and add the garlic and onion.
- Cook the onions and garlic until translucent. Add the frozen mixed veggies and cook with everything in the pan.
- Add the rice and liquid seasoning. Mix well.
- Add the scrambled egg and cook for 5 minutes.
- Serve hot.
