
If you’re a mom, you know the drill. 🙋♀️
Every single day, like clockwork, there’s that one question that never fails to pop into your head — or worse, gets asked by your kids or hubby the moment you open your eyes:
“Ma, anong ulam?”
And suddenly, your brain starts going through the weekly meal rotation like a slot machine — adobo, sinigang, giniling, tinola… repeat. Add to that the pressure of making it healthy, delicious, and different from yesterday (because heaven forbid we serve the same thing twice in a row), and you have the perfect recipe for what I call “Meal Planning Fatigue.”
That’s me today. My mental pantry was running on empty, and I really wasn’t in the mood for a complicated dish. But then, a little lightbulb went off — why not make something fun, colorful, and easy?
So… Easy Chicken Fajita it is! 🎉
Why I Love This Dish
Chicken fajitas are a lifesaver because they’re:
- Quick to cook – ready in under 30 minutes (yes, including prep!)
- Healthy-ish – lots of colorful bell peppers, onions, and lean chicken breast
- Customizable – everyone can assemble their own, which means less stress for mom
- Fun to eat – there’s something about wrapping your food that makes it more exciting for the kids (and for me, too!)
Today, I’m pairing mine with a side of simple salad and a cold glass of iced tea. Lunch/dinner dilemma solved, and I even managed to sneak in some colorful veggies for the kids without a single complaint.
Moms, remember: every meal doesn’t have to be a grand production. Sometimes, the easiest dishes turn out to be the most loved.

Ingredients
- 600g chicken breast, cut into strips
- salt and pepper
- 1 tsp cumin
- 1 tsp paprika
- 1 tsp garlic powder
- 2 onions, sliced
- 4 bell peppers, cut into strips
- olive oil
- pita wraps for serving
Garlic Sauce
- 1/3 cup mayonnaise
- juice of 1/2 lemon
- 2 cloves garlic, grated
- salt and pepper
- a pinch of sugar
- water or milk to thin it out (optional)
Instructions
- Make the garlic sauce: Combine all the ingredients in a bowl and mix well. If sauce is too thick, add 2 tbsp milk or water. Set aside in the fridge.
- Heat about 2tbsp of oil in a pan. Fry the chicken until cooked. Remove from pan and transfer in a plate.
- In the same pan, add the onions and bell peppers. Cook for about 1-2 minutes.
- To serve, heat a pita wrap in a new pan, add chicken and bell peppers. Drizzle with the garlic Sauce.
