Sun-Dried Tomato Pesto Crusted Chicken Breast

You can use ready made sun-dried tomato pesto from a jar or you can make your own.You can also use the  pesto for your pasta.


6 boneless skinless chicken breast
1 cup bottled sun-dried tomatoes
2 cloved garlic
1 cup fresh basil leaves
1/3 cup parmesan cheese
freshly ground black pepper
salt to taste
1/2 cup canoila oil/olive oil


For the pesto:
Blend Sun-dried tomatoes, basil and garlic in a food processor. Add parmesan,salt and pepper to taste. Set aside.

  • Season chicken breast with pepper.
  • Heat canola oil in a pan.
  • Fry both sides of chicken until brown.
  • Coat both sides/one side of chicken with pesto and bake in an oven for 20 minutes.
