Zucchini Pancakes

Yes,I know what you’re thinking… It doesn’t look like a pancake. Well, this is actually a failed pancake. It failed because….
a.) This recipe calls for Panko breadcrumbs
b.) I am currently on SBD and
c.) I omitted the breadcrumbs from the recipe.

Silly me, I thought it would still hold its shape after frying but it didn’t. It looked like a small blob. Anyways, I tasted “the blob” and found the taste fantastic. So, again, I thought why not make it a casserole then? I baked it in the oven until brown. It smelled amazing……but it tasted FUNNY. It tasted really funny I wouldn’t feed it to my enemies.

In case you have enemies you want to kill by feeding them something…here’s the recipe…just omit the Panko. Add the Panko if you want yummy zucchini pancakes.

Ingredients:
1 cup zucchini, grated
1 egg
1 onion, chopped finely
1 clove garlic, minced
salt and pepper
oil for frying
1 cup Panko breadcrumbs
1 tbsp dill

Directions:

  • Combine all the ingredient in a large bowl except for the oil.
  • Mix well.
  • Heat a non-stick skillet.
  • Put a scoop of the mixture in different areas of the skillet to form small pancakes.
  • Fry in until brown.
  • Serve hot.
