Waldorf Salad

I challenged myself yesterday to see if I could drink just one cup of coffee for the whole day. I am not used to drinking just a cup in the morning, so you must know how I feel . Come early afternoon, I was über sleepy and I thought I’m not gonna make it.

Well, I didn’t. Sis made pasta and I paired it with a coke zero. Technically, I didn’t have coffee but I still drank something with caffeine.

By Spongebob Squarepants time with ykaie {8:30pm}, I felt that teeny weeny urge to drink another cup. I drank decaf. Could I say I made it all through out the day with just a cup of  coffee???

Am I off for another challenge today?…we’ll see.

Here’s a little trivia: Do you know that Waldorf Salad was first created between 1893 and 1896 at the Waldorf Hotel in New York City? It was one of the hotel’s signature dishes.

Ingredients:
2 cups red apple, diced
1 cup green grapes {seedless}
1 cup red grapes {seedless}
½ celery,chopped
1 cup walnuts
½ raisins
2 cups mayo
1 tbsp lemon juice
salt and pepper
½ tbsp sugar
lettuce

Directions:

  • Whisk mayo, lemon juice, sugar and a pinch of salt and pepper in a large bowl.
  • Add all the other ingredients except lettuce in and mix well
  • Make sure all ingredients are coated with dressing.
  • Chill and serve on a bed of lettuce
