I now have a new favorite grocery destination.

Last weekend, our feet took us to Fishermall just because we were craving for Mister Kabab where I learned to order the Shawarma Plate instead of the Special Beef Chelo Kabab (I’m holding off on the rice and butter, people!).  It was the perfect place because (a.) there’s a Mister Kabab restaurant there and (b.) there’s a supermarket — my favorite place of all time.

You know what I found out about their supermarket? It has lots of fresh seafood I don’t usually find in other supermarkets! (It’s Fishermall, duh.) There are baby octopus and fresh scallops, among others. You know how Grilled or Baked Scallops can get really expensive when you order it in restaurants, right? Six to nine pieces will cost you around ₱400.

A kilo of fresh scallops there is only ₱280!

The problem was, since it was my first time cooking fresh scallops, I didn’t know how to clean it. When you buy frozen scallops, all you get is the medallion-like meat, right?

Googling it told me that those orange sacks are roe and that what I should remove are the black sack and all the other membranes.

Removing all those nasty stuff made room for garlicky butter and two kinds of cheese! Oh, the weekend was indeed an indulgence.

Meanwhile, it’s so haaaard to adjust my eating habits!!! I’m trying my best to do portion control and to keep away from high sugar and high carb food for the mean time. It’s just so difficult when I’m out. Yesterday, I attended the launch of Mustela Maternite, a complete range of skin care products for pregnant moms and new moms! (which I’m gonna tell you all about at www.mommypeach.com, soon.). I had this Vegetarian Soba Pasta at Le Petit Souffle that tastes sooooo good, I wanna replicate it!

peanutbutter had the Smoked Ham Cubano from Mister Delicious and a bottle of Joe’s Brew from Smoky Bastard. He only had half of it and half to take home because the sandwich was big enough for two servings.

And today, guess what I prepared for lunch? We had Steak with Chimichurri Sauce and Mac N’ Cheese on the side!

Ykaie and peanutbutter was so pleased with lunch! We finished a big chunk of porterhouse and t-bone! I’ll be sharing with you the recipe soon….

Cheesy Baked Scallops

Back to these two-cheese Baked Scallops.. these are super cheesy since it had monterey jack and parmesan. Ykaie loved it so much she wanted another kilo of scallops. I found it a bit dry, though. I’ll have a makeover of this recipe, perhaps put a bit of mayonnaise or some bechamel.

Baked Scallops again next weekend? Ykaie would be very happy.

Of course, if you want it spicy, just add a few drops of Tabasco Hot Sauce! Ang cute ng Mini-Tabasco no?

Cheesy Baked Scallops

Ingredients

Scale
  • 1kg fresh scallops, shucked and cleaned
  • 1/2 cup butter, softened
  • 4 cloves garlic, minced
  • 1/4 tsp salt
  • 2 cups colby jack cheese, shredded
  • 1/4 cup grated parmesan cheese
  • 1/4 cup parsley, chopped finely
  • lemon wedges

Instructions

  1. Make sure you leave one part of the scallop shell after cleaning and shucking the scallops.
  2. Combine butter, garlic and salt in a small bowl and mix well.
  3. Assemble scallops on a baking pan.
  4. Put a small amount of the butter-garlic mixture, cheese, and parsley on each scallop.
  5. Bake at 350ºF/177ºC for 15-20 minutes or until cheese is light brown and bubbly.
  6. Serve with lemon wedges and hot sauce.

  9. I liked this “lampirong” – scallops ever since i was a kid. I cooked it naturally – stir-fried and it’s really delicious with white rice. For sure, this weekend, I’ll try to find in the market.

  10. I haven’t tried this yet but I’ll give it a shot whenever there are scallops available in the market. It is rarely available here in our place but whenever it is available, it gets sold quickly! But I’ll see to it that I can buy this time and will definitely give this a try.
