The simplest Pear Pomegranate Salad that was made using what’s in the fridge…
The problem with this no rice diet thing is that when I decided to serve the leftover Smoky Honey Sriracha Ribs from Twinkle’s 7th Month Supergirl party the next day, I didn’t have something to go with it… peanutbutter♥, of course, ate it with rice so I thought of making a salad.
I always keep some lettuce in the fridge so I know I can make a salad out of something there. There were two pieces of pears, and this Jalapeño Havarti Cheese. Guess what? I also found a pomegrenate. Sis bought it for me when she went to Divisoria, I didn’t know what to do with it at the time so I kept it in the crisper. It was just what I need to at least give color to my salad to make it appetizing.
I know my salad looks kawawa with only four ingredients — well, five, including the Brown Sugar Balsamic Vinaigrette but it did its job of complementing the ribs. It was delicious too, if I may say so. I just think it needed some nuts and one more kind of vegetable.

I start craving salads at this time of the year. We’ve been having so much heavy “comfort” food, right around now I’m starting to think of lighter things. This is perfect! Thanks so much.
It’s true, we need lighter food these months.
I’m addicted to snapchat, too. By the way, I’m doing this intermittent fasting. It works for me as I don’t have to give up anything like rice or bread.
I would love to hear more…
This looks amazing! I have never thought about putting pomegranate in my salads, but now I have to try it. I’m such a huge fan of fruit in my salad, I’m surprised I haven’t thought of it.
Sounds like a yummy salad. I am looking forward to trying your recipe.
Hope you like it.
This salad looks amazing! I love pomegranate seeds and pears, so this is the perfect salad for me.
I love salads, they’re easy and they’re healthy as well. Salads are usually my go-to lunch especially during the summer!
Cheers to that!
I would exchange the cheese for something milder, maybe provolone or muenster, but this looks DELISH!!! Super easy and full of flavor. Thanks for sharing!
you’re welcome! That’s a great idea!
I love goat cheese with pomegranates. It’s such a delicious combination. I’ll have to put these on my shopping list.
