 SPAM Kimchi Fried Rice

Kimchi Fried Rice is one of my comfort food. I have to avoid spicy food but Kimchi is a favorite making it so hard to resist. It’s a good thing that its a fermented food that it acts as a good probiotic, so it doesn’t affect my LPRD that much.

Kimchi is a great side dish. I actually never run out of this at home and use it to pair with almost all ulams. It goes so well with SPAM because the brightness of the kimchi cuts through the fattiness of the SPAM.

What’s so great about this SPAM KIMCHI FRIED RICE?

  • For one, it’s a great way to use leftover rice and leftover kimchi.
  • If you don’t have SPAM at home, just adding fried egg will do.
  • This is a great way to use leftover vegetables and protein. You can add carrots, beans, chicken — basically whatever you like.
  • There’s a perfect balance of flavors – salty, sweet, sour, umami.

SPAM Kimchi Fried Rice

Ingredients

Scale
  • 1 tbsp oil
  • 12 eggs
  • 1/2 can of SPAM, cut into cubes
  • 1/2 cup of kimchi, cut into pieces with 2 tbsp kimchi juice
  • 3 cups rice
  • 1 tsp sesame oil
  • fish sauce (optional)
  • spring onion
  • roasted sesame seed
  • crushed nori sheet

Instructions

  1. Fry egg and set aside.
  2. In the same pan, fry the SPAM until cooked.
  3. Add the kimchi and kimchi juice and cook for 30 seconds.
  4. Add the rice and mix well. Cook for about 3 minutes
  5. Season with sesame oil and fish sauce.
  6. Transfer t a bowl, top with fried egg and garnish with spring onion, sesame seeds, and nori.
