I was stressed to the MAX the last several days! If you noticed, the website has been down since August 26 (yes, napansin niyo ba?). The culprit? My server’s OS has been obsolete since 2020 pa! (Like, hello, 2020 pa talaga?!). So ayun, napilitan akong mag-upgrade and update a lot of things sa backend. Hindi naman ako techie, so imagine my face tinkering with codes and dashboards na parang alien language. 😂 First time ko talaga to “tinkle” sa background and boy, it was nakaka-stress but also nakaka-proud.

Good thing the technicians from Namecheap (my hosting provider) were super helpful. Sila yung lifesaver ko! May mga moments pa nga na naisip ko, “Wow, parang ang galing ko na…” kahit ang totoo, half the time clueless ako. LELz. Pero you know what? Coming out of it, I actually felt accomplished — parang nag-level up ako in adulthood points. Haha!

Anyway, dahil umuulan na naman these past few days, I thought to myself: soup season is officially here! And what better way to treat myself after all the stress than with a bowl of something creamy, warm, and comforting? That’s when I decided to make Broccoli and Cheese Soup. 🥦🧀

This soup is everything I needed — healthy but also indulgent, kasi hello… CHEESE. Balance lang, diba? The broccoli gives it that earthy goodness while the cheese makes it feel like a hug in a bowl. Add the rain pattering outside, and ay naku, heaven na!

I served it with some toasted bread on the side, and we slurped it down habang nanonood ng Netflix. Twinkle actually loved dipping her bread into the soup (like mini fondue style) while Ykaie said it’s her new favorite rainy day meal. Daddydoodledoo, of course, was just happy to have something warm and filling after a long day.

So kahit na sobrang stressful ng past few days, at least I got two things: (1) a working website again (yay me!), and (2) this comforting Broccoli and Cheese Soup that reminded me that sometimes, the best way to recharge is a bowl of something simple and delicious.

If you’re looking for a cozy recipe to make during these rainy days, I really recommend trying this. It’s easy, it’s hearty, and it’s the perfect stress-relief food.

P.S.

I made my soup chunky as I like chunky soups. Turns out that when it comes to Broccoli and Cheese Soup, I like it just a bit chunky. So I later used an immersion blender to break the chunky broccolis. I loved it!

Broccoli and Cheese Soup

Ingredients

  • 1 tbsp oil
  • 250g bacon, cut into pieces
  • 1 large white onion, chopped
  • 5 cloves garlic, chopped finely
  • 2 tbsp flour
  • 1 360ml can evaporated milk
  • 3 cups water
  • 1 chicken cube
  • 1 large head of broccoli, roughly chopped 
  • 1 carrot, shredded
  • 12 cups cheese, shredded or grated
  • 1/2 cup all-purpose cream (optional)
  • salt and pepper to taste

Instructions

  1. Heat oil in a large pot over medium heat. Add the bacon pieces and cook until golden and crisp. Remove some for garnish, if desired.

  2. In the same pot with the bacon drippings, sauté the onion until translucent, then add the garlic and cook for about 1 minute until fragrant.

  3. Sprinkle in the flour, stirring continuously to make a light roux. Cook for 1–2 minutes to remove the raw flour taste.

  4. Slowly pour in the evaporated milk while stirring to avoid lumps. Then add water and the chicken cube. Stir until the cube is dissolved and the mixture begins to thicken slightly.

  5. Add the broccoli and carrot. Cover and let simmer for 8–10 minutes, or until the vegetables are tender.

  6. Stir in the shredded cheese until melted and the soup turns creamy. If you want it richer, add the all-purpose cream at this stage.

  7. Season with salt and pepper to taste.

  8. Serve hot, garnished with the reserved crispy bacon on top. Best enjoyed with crusty bread or toasted pandesal.
