My throat hurts….

I don’t know if this is due to the fact that I cannot stop eating Nutella by the spoonfuls or because of the three pesky but totally adorable kids who makes me shout every three minutes…

I wonder, is this fate telling me to stop eating sugar for a while and go on a diet??

Oh I will, fate…believe me, I have every intention of losing these extra pounds…

You just have to wait for, oh I dunno,  six days for me to start, hee……

Six more days because….

I have this lunch thing on friday, and another lunch thing on tuesday and probably a lunch-slash-afternoon thing on monday.

Lunch is my favorite meal of the day…*sigh*

It’s just difficult for me to say no to a lunch invite….and these wonderful people keep on inviting me for lunches…

I love them..but I have to stop for a while because we have this big summer vacation coming up….

and I’d definitely wanna be seen in a sundress and a bikini — with cover-ups, of course. LOL!

One of the dishes that I prepared for the new year are these beautiful pizza bites.

I think these are the perfect finger food because they are crunchy and has the explosive pizza flavor without being your ordinary day-to-day pizza. And since it is finger food, it’s a multitasker’s ideal snack –perfect when you’re reading a book, playing online bingo or chatting with your friends and browsing the internet.

Warm n’ Crispy Pizza Bites

Ingredients:

8 ounces cream cheese, softened
½ tsp dried oregano
½ tsp dried basil
1 clove garlic, minced
1 cup shredded mozzarella cheese
1 cup pizza sauce {I used a storebought, sweet pizza sauce}
3 ounces finely chopped pepperoni or salami {I used salami}
wonton wrappers
2 tbsp canola oil for greasing the muffin pan
Directions:

  • In a small bowl, combine cream cheese, oregano, basil and garlic. Mix well with s fork.
  • Lightly grease a mini-muffin tin pan with oil and press one wonton wrapper gently into the muffin tin, carefully but firmly pressing it into the sides of the cups.
  • Bake the wonton wrappers for 4-6 minutes, until lightly browned. Remove the pan from the oven and keep the wonton wrappers in the mini cups.
  • Put a dollop of the cream cheese mixture into the bottom of each wonton cup. Sprinkle mozzarella cheese over the top of the cream cheese mixture. Top with a teaspoon or so of the pizza sauce. Sprinkle with chopped pepperoni/salami.
  • Bake for 5 more minutes until the filling is bubbly and wonton edges are golden brown. Serve warm!

See this? Everything’s better in a crispy wonton cup…..
