I made it when I was having a major craving for Micky D’s cheeseburger and the comfort of something something steamy and warm.
I also have a thing for pasta salads…
If you can remember this Pesto Pasta Salad with Roasted Bell Pepper and this Penne Mango Salad, then you know how serious I can be with my pasta salads….
For today’s menu, I am serving pizza in the form of a pasta dish that is a salad….
Am I making any sense? No?
Well, let me just tell you that this pasta salad dish has all the ingredients that you want in your pizza like pepperoni, mozzarella cheese, parmesan cheese, olives and all the herbs and spices you can think of…. although, I cheated a little and used ready-made Italian dressing….and I totally forgot I don’t have any tomato…
Remember to put tomato in yours….

This recipe is perfect for picnics, barbecues and family outings…..totally a make ahead recipe. Just make sure to make it within the day and use the most delicious Italian Dressing you can find. I’ll try to make a homemade dressing for this salad next time….
- 300g colored noodles, you can use spiral or any other shape you want
- ¾ c. pepperoni cut into wedges
- ¾ c. mozzarella cut into small cubes
- ¾ c. fresh tomatoes, diced {this one, I forgot to buy at the market}
- ½ c. olives, sliced
- ¼ c. parmesan cheese
- 1-2 cups Italian Dressing
- Mix together all ingredients and chill in the fridge for at least 3 hours before serving.
